Bibimbap
Ingredients
Beef
- 200 g minced beef
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp brown sugar
- 2 cloves garlic minced
Rice
- 160 g short grain sushi rice
- 175 g water
- 1 tsp fine sea salt
- ¾ tbsp sugar
- 1 tbsp rice vinegar
Sauce
- 1 tbsp gochujang
- ½ tbsp sesame oil
- ½ tbsp sugar
- ½ tbsp water
- ½ tbsp black sesame seeds
- ½ tsp apple cider vinegar
- 1 clove garlic minced
Toppings
- 200 g baby spinach
- 125 g fresh shiitake mushrooms
- 2 eggs
- 1 spring onion finely sliced
Instructions
- Mix together all the beef ingredients in a bowl and allow to marinade for at least 20 minutes.
- Add the rice and water to a rice cooker allow to cook.
- In a small bowl, mix together all the sauce ingredients to create the sauce.
- As the rice is cooking, brown the beef in a frying pan. At the same time, fry the mushrooms in a little oil in a separate pan. Also wilt the spinach and fry the eggs.
- Once the rice is cooked, add the salt, sugar and rice vinegar to the rice.
- Add the rice to bowls, alongside the beef, sauce, mushrooms and spinach. Sprinkle over the spring onion, then top with the fried egg.
