Colcannon
Irish mashed potato and cabbage
Ingredients
- 400 g potatoes chopped
- 45 g butter
- 25 g whole milk
- 80 g cabbage finely sliced
- 120 g leek sliced
Instructions
- Boil or steam the potatoes until soft, around 15 minutes
- In a medium pan, melt the butter over a medium heat. Once melted, add the cabbage and leek and cook until softened, around 5 minutes.
- Add the potaoes and milk to the cabbage, season well, then mash.
