Ingredients
  

Rice

  • 160 g short grain sushi rice
  • 175 g water
  • 1 tsp salt
  • ¾ tbsp sugar
  • 1 tbsp rice vinegar

Hoisin Chicken

  • 1 large chicken breast sliced
  • cup sweet hoisin sauce
  • 1 tbsp soy sauce
  • ½ tbsp rice vinegar
  • ½ in knob ginger finely chopped
  • 1 clove garlic minced
  • ¾ tsp sesame oil
  • ½ tsp Chinese five spice

Toppings

  • 90 g mange tout
  • 90 g baby sweetcorn
  • 2 spring onions sliced
  • 1 carrot grated
  • black sesame seeds

Instructions
 

  • First wash the rice thoroughly, then put the rice and water into a rice cooker until cooked. Add the salt, sugar and rice vinegar to the rice.
  • Meanwhile, mix the hoisin sauce, soy sauce, rice vinegar, ginger, garlic, sesame oil and Chinese five spice. Fry the chicken with the sauce until cooked (5-10 minutes).
  • In a separate pan, fry the baby sweetcorn over a medium heat in a little oil. After around 5 minutes, add the mangetout and continue to fry for around 5 minutes until cooked.
  • Once all the ingredients are ready, add the cooked ingredients to bowls. Top with the carrot, spring onion and sesame seeds.
