Easy Paella

This isn’t your true traditional paella, but it is a quick, easy and delicious evening meal. It is one of the few things we’ve eaten most weeks for the past year. This recipe is pretty close to the original from Jamie Oliver.

A quick delicious one-pan paella

Ingredients
  

  • 1 tsp olive oil
  • 1 glove garlic minced
  • 1 onion diced
  • 1 medium carrot diced
  • 55 g Spanish chorizo diced
  • 1 chicken breast diced
  • ½ tsp smoked paprika
  • 1 red pepper diced
  • 150 g paella rice
  • 1 tbsp tomato purée
  • 1 chicken stock cube
  • 375 ml boiling water
  • 100 g frozen king prawns
  • 50 g frozen peas
  • 2 wedges lemon

Instructions
 

  • Heat the olive oil in a large frying pan over a medium heat. Add the garlic, onion, carrot, chorizo, chicken and smoked paprika, then fry for 5 minutes.
  • Add the red pepper and fry for a further 5 minutes.
  • Add the paella rice, tomato purée and crumble the stock cube in. Season with salt and pepper. Mix well, then add the boiling water. Add a lid, reduce to a simmer and cook for 15 minutes, stirring occasionally.
  • Mix in the prawns and peas, replace the lid and continue to cook until the prawns are cooked through, around 5 minutes.
  • Serve with a lemon wedge per serving to squeeze over.
