English Muffins
Delicious home made English Muffins
Ingredients
- 480 ml whole milk @ 35°C
- 45 g granulated sugar
- 8 g instant yeast
- 1 egg
- 55 g butter lightly melted
- 675 g bread flour
- 8 g fine sea salt
- cornmeal for dusting
Instructions
- Combine the warm milk, sugar and yeast in a stand mixer bowl, then let sit for 5 minutes to bloom.
- Add the egg, butter, bread flour and salt. Mix together using the dough hook on low speed until combined, then increase speed to medium and knead for 10 minutes.
- Cover the bowl and allow to rise at room temperature for 1 hour, or until doubled.
- Punch down the dough and divide in to 16 equal pieces. Shape in to balls and place on to a rimmed baking sheet dusted with cornmeal. Dust the tops with cornmeal, then cover and rest for 10 minutes.
- Heat a heavy frying pan over a medium-low heat. In batches, take a ball, flatten it, then place in the frying pan for 4 minutes per side.
- Transfer to a baking sheet and bake in a preheated oven at 180°C for 7 minutes, then allow to cool on a wire rack.
