Ingredients
  

  • 2 tbsp chili powder
  • 1 tsp kosher salt
  • 1 tsp garlic granules
  • 1 tsp onion powder
  • 1 tsp ground cumin
  • ½ tsp dried oregano
  • ¼ tsp black pepper freshly ground
  • pinch cayenne pepper
  • 1 tsp vegetable oil
  • 500 g minced beef 15-20% fat
  • 1 tin refried beans
  • 2 bags lightly salted tortilla chips
  • 100 g mozzarella grated
  • 100 g mild cheddar grated
  • 2 jars mild salsa
  • 1 jar sliced pickled jalapeños
  • 300 ml soured cream

Instructions
 

  • Preheat the oven to 180°C.
  • Heat the oil in a frying pan on a medium-high heat. Add minced beef and all the spices, break-up and stir until browned – about 8 mins.
  • Add the refried beans and a splash of water, heat until the beans are smooth and heated through.
  • Spread the chips on a baking tray, and top with the cheese. Bake for 5-10mins until cheese has melted.
  • Distribute into large bowls, and top with the beef mixture, salsa, pickled jalapeños and soured cream.
