Ingredients
  

  • 375 ml whole milk @ 35°C
  • 3 tsp instant yeast
  • 640 g bread flour
  • 110 g caster sugar
  • 2 tsp all spice
  • 2 tsp cinnamon powder
  • ½ tsp salt
  • 1 large orange zest only
  • 50 g melted butter allowed to cool
  • 210 g sultanas
  • 1 egg at room temperature
  • 1 tbsp runny honey

Instructions
 

  • Combine the warm milk and yeast, then let sit for 10 minutes to bloom.
  • In a stand mixer bowl, whisk together the flour, sugar, all spice, cinnamon, salt and orange zest.
  • Add the yeast mixture, melted butter, sultanas, and egg. Mix on low speed until combined and smooth.
  • Shape the dough into a ball, place in a lightly greased bowl, cover with cling film and allow it to double in size (around 1-1.5 hours).
  • Punch down the dough, and turn it out onto a floured work surface. Divide into twelve pieces, and shape into balls. Place the balls in a 32 x 26 cm baking tray with baking paper in a 4 x 3 layout. Cover with greased cling film to rise until almost doubled (45-60 min).
  • Bake at 180°C for 22 minutes, until a deep golden brown.
  • Once cooked, transfer the buns to a cooling rack and immediately brush with honey. Allow to cool before serving.
