Ingredients
  

Sausage Patties

  • 500 g Pork mince 5% fat
  • 8 g fine sea salt
  • 4 g ground black pepper
  • 1 g dried thyme
  • 1 g dried sage
  • 1 clove garlic minced
  • 5 g ginger minced
  • 5 g apple cider vinegar
  • 20 g maple syrup

  • Combine all sausage patty ingredients, mix well and combine until the mix becomes slightly sticky.
  • Divide the meat mix in to 8 patties, then smash each between two sheets of parchment paper into very thin, flat, rounds.
  • Preheat a non-stick frying pan over medium heat. For each sandwich, cut an English muffin in half and toast. Fry a patty in the pan and an egg in a greased crumpet ring until both are cooked, flipping the patty half way through.
  • Construct the sandwich with the patty on the bottom half of the muffin, then the egg, then the top. Optionally add a slice of American cheese.
