Sausage and Egg Breakfast Muffin
McDonalds Sausage & Egg McMuffin, but better! The patties can be frozen once formed.
Ingredients
Sausage Patties
- 500 g Pork mince 5% fat
- 8 g fine sea salt
- 4 g ground black pepper
- 1 g dried thyme
- 1 g dried sage
- 1 clove garlic minced
- 5 g ginger minced
- 5 g apple cider vinegar
- 20 g maple syrup

English muffins
Instructions
- Combine all sausage patty ingredients, mix well and combine until the mix becomes slightly sticky.
- Divide the meat mix in to 8 patties, then smash each between two sheets of parchment paper into very thin, flat, rounds.
- Preheat a non-stick frying pan over medium heat. For each sandwich, cut an English muffin in half and toast. Fry a patty in the pan and an egg in a greased crumpet ring until both are cooked, flipping the patty half way through.
- Construct the sandwich with the patty on the bottom half of the muffin, then the egg, then the top. Optionally add a slice of American cheese.
